Description
A water immersion rotary retort uses two vessels to carry out the thermal processing of products. Water is pre-heated in the top vessel, called the "Storage Vessel," and then transferred to the bottom vessel, called the "Process Vessel," immersing the containers of product while moving through the water circulation system. This course focuses on "rotary" water immersion retorts, meaning that the retort performs end-over-end rotation of the baskets of containers while processing. Chapters 1-6 will provide a general understanding of retorts and how they work, why they are used, and how to do your job as a retort operator. Chapter 7-9 will provide a general understanding of water immersion rotary retorts and how they are designed, how they operate in detail, what records you should keep regarding them, and how to handle deviations.
