A water spray rotary retort uses a heated water circulation/spray system to process the containers of product. This course focuses on "rotary" water spray retorts, meaning that the retort performs end-over-end rotation of the baskets of containers while processing. Chapters 1-6 will provide a general understanding of retorts and how they work, why they are used, and how to do your job as a retort operator. Chapter 7-9 will provide a general understanding of water spray rotary retorts and how they are designed, how they operate in detail, what records you should keep regarding them, and how to handle deviations.
